I taught a macaron class this afternoon, and as usual it was a lot of work but completely and totally worth it! There is this awesome a-ha moment in every class when my students see the macarons all puffed up in the oven, and their excitement over it reminds me why I love baking. A few simple ingredients combined in the right way can be magic!
Since macarons require a ton of egg whites, I always end up with about 15 yolks after I teach a class. Somehow I found a second wind tonight and, determined to make use of my yolks, I put together these Chocolate Espresso Pots de Creme. Again… simple ingredients (cream, chocolate, egg yolks, sugar, espresso powder), magic chocolatey results. Topped with a dollop of homemade whipped cream and a sprinkling of espresso powder, this is the perfect treat for the end of a long day. Happy end-of-weekend, everyone!
