Are you tired of cookies yet? No? Good.
I know that we’re all trying to be good and “eat healthy” and exercise so that we can lose 10 pounds in 2014, but really guys… where’s the fun in that? This is a recipe that’s left over from my holiday baking, but it’s definitely a cookie that can be enjoyed year-round.
Another appearance here of the fabulous jam lady who I buy from in upstate NY. Her rose petal jam makes an appearance in these beautiful cookies. If you’ve never used rose in cooking or baking before, don’t be scared. If used correctly, it’s a subtle flavor that’s slightly floral but not in a “why I am drinking perfume?” kind of way. Rose jams are typically balanced with a little bit of acid (usually lemon juice) and can be used in sweets or simply with cheese and crackers.
I used this base recipe for thumbprint cookies, but modified it slightly with 1/2 tsp. of cardamom in the dough. Cardamom plays really well with rose flavoring, and it brought a nice warm flavor to the cookies. Cardamom can also be a little overpowering, which is why I always err on the conservative side when I use it.
